Masa – Masa is made from ground corn that has been nixtamalized. Corn tortillas, tamales, pupusas, gorditas, and many other Latin American dishes are made with it. Its dried and powdered form is called dough flour. A dough is prepared by rehydrating flour with water before using it in cooking.
