Soup of the week: Green soup

A warm and hearty soup full of pretty green colour and more importantly vitamines and proteins? Yeah, that exactly is the Green soup I made last week when winter decided to give us a quick visit again. Since my daughter enjoyed it (even with the red lentils she wouldn’t have otherwise even touched), I decided to share this recipe with you!

Soup of the week - Green soupPin

Preparation time: 10 minutes

Cooking time: 30 minutes

  • Coconut oil
  • 6 cups of water
  • 1 onion
  • 1 broccoli
  • 15 asparagus
  • 1/2 cup (125ml) red lentils
  • 1 tsp. (5ml) of curcuma
  • 3 tbsp.(45ml) nutritionnal yeast
  • salt and pepper
  • Melt the coconut oil over medium heat and add the onion. Stir them for 5 minutes until they start to become clear. Then add the broccoli, the asparagus, the red lentils, the curcuma and the nutritional yeast. Put some salt and pepper. Add 2 cups of water and scrub the bottom. That way you are building your broth. Bring it to boil and add 2 more cups of water. Again bring it to boil and add the balance of the water. Let it cook for 20 minute. With a hand mixer or with a food processor, blend the soup to cream it.

What do our readers say about this recipe?

“The soup was really creamy and had a lot of flavor.”

“I liked the fresh taste of the lentils.”

“It didn’t make too much flavor or it wasn’t too buttery.I think I will make this soup again and again, it is easy to prepare and very healthy.”

“I like it because I do not like mixing my food in a blender and I like how creamy it was,”

“I enjoyed the mixture of the veggies and how it looks.”

“I liked everything in this soup; I think it is very delicious. My husband and my kids also liked the soup, but my son did not like the red lentils.”

“Soup texture was great.”

“I liked the soup because it was not too creamy, but, I didn’t like that there were no vegetables in it, so I recommend this:

1)Sautéing the onion in coconut oil is one of my favorite ways of preparing this soup. 2) It took 30 minutes to get this soup creamy. 3) Serve Green Soup with Quinoa followed by a little crunchy avocado so you can have some extra protein sources.

“This was great! Tasted great and very quick & easy to make.”

“These were awesome! My mom is coming into town this weekend and she is going to love them as much as I do. The recipe definitely worked well for me.”

Love you all thanks for all of these awesome reviews baby I AM SO SO SO SO SO MUCH MUCH MUCH HAPPY THAT I KNOW Y’ALL! I know I am a good cook, but it is good to see so many people realizing it too – I know I am really cool – I know there ain’t nothing I can’t do – and you know I’m going to – probably sometime soon – do a boo – at you.
