Kale and strawberry salad

I miss summer so much I couldn’t resist and made myself a fresh, fruit salad to recall it a little. It’s as simple as they made them, but I gurantee you you will enjoy it. By the way, to reduce the amount of dressing you use, let your salad absorb it for a few minutes before serving 😉

Preparation: 10 minutes

Salad dressing:

  • 2 tbsp. (30ml) of olive oil
  • 1 tbsp. (15ml) of organic apple cider vinegar
  • 1 tsp. (5ml) of dijon mustard
  • 1/2 tsp. (2.5ml) of GF tamari sauce
  • 1/2 tsp. (2.5ml) of maple syrup
  • pepper

Salad

  • 3 cups (750ml) of organic baby kale
  • 1 cup (250ml) of organic sliced strawberries
  • 3 tbsp. (15ml) of organic hemp seeds
  1. In your salad bowl, whisk all the ingredients for the dressing until you get a smooth texture.
  2. Add in your kale, the strawberries and the hemp seeds. Toss it to mix it well and set aside for 5 minutes.

As I always do, I asked my readers to take part, maybe tell me what they think about my recipes and give me some tips, as well. What do they think of this one? Do they like it, did they make someone important to them happy with it? Did it help them save some time? Simply, what do our readers say about this recipe? Here it comes:

“I made this with a combination of Chard and Spinach after looking for a recipe for a vegetable based salad dressing. This is the only way I will make salads from now on. Thank you!”

“I made this yesterday, I used arugula and strawberries, it was delicious!!”

“Well Claire made this one yesterday with Romaine lettuce leaves, strawberries and pineapple it was delicious! I liked that she included ingredients to use if someone has an intolerance for certain foods. We loved the flavor of the dressing.”

“I’m making a batch of this at any time – my new go-to easy salad recipe.”

“I have been trying to get my children to eat more fruit in their diet.”

“I enjoyed the salad. It was very refreshing, but I did feel it needed more sweetness. I did add 1 date, but that wasn’t enough for me. Maybe next time I’ll add 2 dates.”

“This was pretty good – both my husband and I ate every bit of it. But definitely needed honey to make it sweeter.”

“Loved this! And so easy!”

“I really like this one!! Good job there :)”

“I made this yesterday and added blackberries instead of strawberries – also added some cherries in with the strawberries.”

“I love this recipe! I have made it twice. First time was with some very fresh strawberries that I grew in my garden. Second time was with frozen strawberries that I had got on sale at the store. It is the perfect summer salad! The only thing I changed was mixing in some chia seeds to replace some of the hemp seeds.”

“This is one of my tip-top favourites, maaaaan 🙂 everytime I make it, people are blown away by its simplicity yet incredible tastiness. I’ve made it both with fresh strawberries and frozen, both are awesome! Added fennel to the mix this time around… mmmmm…”

And a little note before I will finally say goodbye to y’all: You’re 1 000, no 1 000 000, no 1 000 000 000 times more awesome and nice and excellent than every recipe here. Love you, love you all!
