- 1 Tablespoon extra virgin olive oil
- 1 garlic clove minced
- ½ cup finely diced yellow onion
- 1 pound ground beef
- 2 Tablespoons taco seasoning
- 1 can 10 ounces Rotel tomatoes
- 1 8-ounce block of cream cheese
- 8 ounces shredded Mexican-style cheese
- chopped cilantro lime wedges, black olives for serving
Heat the Oil: Heat the olive oil in a large skillet over medium-high heat.
Cook Garlic and Onions: Add the minced garlic and finely diced onions. Sauté until soft and fragrant, about 1-2 minutes.
Cook the Beef: Add the ground beef to the skillet. Break it up with a wooden spoon and cook until it is just cooked through.
Add Remaining Ingredients: Stir in the Rotel tomatoes, taco seasoning, cream cheese, and shredded Mexican-style cheese. Continue stirring and cook until all the cheese is melted and well combined.
