Curried Ground Beef

- 4 cloves garlic minced
- 1 tsp grated fresh ginger
- 2 Tbsp cooking oil
- 1 Tbsp curry powder
- 1 tsp turmeric
- 1/4 tsp crushed red pepper optional
- 1 lb. ground beef 15% fat or less
- 1 russet potato
- 1 cup beef broth
- 1 cup frozen peas
- 1/2 tsp salt
- 2 green onions sliced (optional)
Initiate with Garlic and Ginger: In a large, deep skillet, heat 2 tablespoons of cooking oil over medium heat. Add 4 cloves of minced garlic and 1 teaspoon of grated fresh ginger, sautéing for 1-2 minutes. Add 1 tablespoon of curry powder, 1 teaspoon of turmeric, and ¼ teaspoon of crushed red pepper (if using), cooking for another minute.
Brown the Beef: Incorporate 1 pound of lean ground beef into the skillet, breaking it apart and cooking until no pink remains.
Prepare Potato: While the beef cooks, peel and dice 1 russet potato into half-inch pieces.
Simmer with Potato and Broth: Add the diced potato and 1 cup of beef broth to the beef mixture. Stir well, cover, and bring to a boil over medium-high heat. Then, reduce to medium-low and let simmer for 10 minutes under cover, stirring now and then. Potatoes should be fork-tender by the end.
Evaporate and Add Peas: Remove the lid, let the mixture simmer for a few more minutes until the broth mostly evaporates. Stir in 1 cup of frozen peas until warmed through. Season with salt to taste (around ½ teaspoon). Optionally, garnish with sliced green onions before serving warm.
