- 2 tbsp olive oil
- 1 small onion finely chopped
- 600 g broccoli chopped into florets
- 1 liter vegetable or chicken stock
- 300 g Stilton cheese
- 150 ml creme fraiche
- salt and pepper to taste
Heat the Olive Oil: In a large pan, warm 2 tablespoons of olive oil over a medium flame. Toss in the small onion, finely chopped, and let it cook for about 5 minutes until soft and fragrant.
Add Broccoli: Introduce the broccoli florets to the pan, continuing to stir and cook for 5 more minutes until they begin to tenderize.
Pour and Simmer: Add 1 litre of your choice of vegetable or chicken stock to the pan. Allow the mixture to come to a simmer, then lower the heat and let it simmer for 15 minutes, blending the flavors together.
Incorporate the Stilton: Crumble 300g of Stilton cheese into the simmering soup. Stir and cook for an additional 5 minutes, letting the cheese melt thoroughly into the soup.
Blend to Creaminess: With a hand blender, carefully blend the soup in the pan until it achieves a smooth, creamy texture.
Finish with Crème Fraîche: Mix in 150ml of crème fraîche into the soup. Season it with salt and pepper to your liking, giving it that perfectly rounded taste.
Garnishing and Serving: Serve the soup hot, garnished with extra bits of broccoli florets and crumbled Stilton cheese on top for a touch of sophistication.
