Ingredients
  

  • 3 tablespoons butter
  • ¼ cup chopped fresh mushrooms
  • 2 tablespoons chopped onion
  • 2 tablespoons chopped celery
  • 2 tablespoons chopped carrot
  • 14.5 ounce chicken broth
  • teaspoon salt
  • teaspoon cayenne pepper
  • 1 ½ cups half-and-half
  • ½ cup dry white wine
  • ½ pound cooked lump lobster meat

Instructions
 

  • Saute Veggies: In a sizable saucepan over medium heat, melt 3 tablespoons of butter. Add ¼ cup of chopped mushrooms, 2 tablespoons each of chopped onions, celery, and carrots, cooking until they're soft.
  • Simmer with Seasonings: Introduce a 14.5-ounce can of chicken broth to the pan, seasoning with ⅛ teaspoon of salt and ⅛ teaspoon of cayenne pepper. Allow the mixture to simmer, integrating the flavors.
  • Blend Lobster into the Mix: Incorporate ¼ cup of the cooked lump lobster meat into the simmering broth. Blend until the concoction is completely smooth, using an immersion blender or transferring carefully to a regular blender.
  • Creamy Lobster Addition: Transfer the smooth blend back into the saucepan. Mix in 1 ½ cups of half-and-half, ½ cup of dry white wine, and the rest of the lobster meat. Heat the mixture on low, stirring often, until it achieves a thicker consistency.
  • Ready to Serve: Once thickened to your preference, serve the bisque hot. Enjoy this luxurious soup with slices of buttered bread for dipping.
