  • 1 medium onion
  • 4-5 cloves garlic minced
  • 4 cups chicken broth
  • 1/2 teaspoon Italian seasoning
  • 5-6 cups broccoli florets
  • 1 Russet potato
  • 3/4 cup heavy cream
  • Salt
  • black pepper

  • Start with Sauté: In a medium-high heat soup pot, combine olive oil and butter. Once hot, add onion and celery, cooking until they are golden brown, about 7-10 minutes.
  • Infuse with Garlic: Quickly stir in the minced garlic, letting it cook for just 30 seconds until fragrant.
  • Build the Soup: Add chicken or vegetable broth to the pot along with Italian seasoning, broccoli, and diced potatoes. Bring everything to a boil, then lower to a simmer with the lid slightly open, letting it cook for 20-25 minutes until the vegetables are soft.
  • Puree to Smoothness: Blend the soup directly in the pot using an immersion blender or carefully transfer to a blender to achieve a smooth texture.
  • Finish with Cream: Mix in the heavy or whipping cream, seasoning with salt and pepper according to your taste preferences, ensuring a generous seasoning for full flavor.
