Ingredients
  

  • 3-4 boneless skinless chicken breasts
  • 1 stalk of celery
  • ½ white onion
  • 2 teaspoons minced garlic
  • ½ cup shredded carrots
  • 1 tablespoon olive oil
  • 4 cups low sodium chicken broth
  • salt and pepper
  • 1 teaspoon thyme
  • 16 ounces potato gnocchi
  • 1 cup fresh spinach

Instructions
 

  • Heat and Sauté: In a large pot over medium heat, warm up the olive oil. Toss in the celery, onions, garlic, and carrots, sautéing them for 2-3 minutes until the onions turn translucent.
  • Combine Ingredients: Add the diced chicken, chicken broth, a sprinkle of salt and pepper, and the thyme to the pot. Bring everything to a boiling point.
  • Gnocchi Addition: After the soup has reached a boil, carefully mix in the gnocchi and let it boil for 3-4 minutes more. Then, lower the heat and let the soup simmer for 10 minutes.
  • Final Touches: Fold in the half and half and the roughly chopped spinach, cooking for another 1-2 minutes until the spinach softens. Do a final taste test, adjust the seasoning with salt and pepper if desired, and it's ready to enjoy.
