- 2 Tbsp olive oil
- 1 medium onion finely diced
- 1 large carrot peeled and thinly sliced
- 4 sticks celery thinly sliced
- 1 1/2 lb lean ground beef 85% or leaner
- 2 Tbsp tomato paste
- 3 cloves garlic minced
- 28 oz canned diced tomatoes
- 8 cups beef broth
- 2 large potatoes peeled and chopped
- 1 tsp Italian seasoning
- 1 1/2 tsp salt or to taste
- 1/4 tsp ground black pepper or to taste
- 3 Tbsp fresh parsley chopped for garnish
Start with Sauté: Heat your pot over medium with 2 Tbsp olive oil. Toss in onion, carrot, and celery slices, cooking until they soften.
Cook the Beef: Add the lean ground beef to the pot, crumbling it as it cooks until it achieves a golden hue.
Combine Ingredients: Mix in the diced tomatoes, garlic, tomato paste, chopped potatoes, and beef broth to the pot. Flavor with Italian seasoning, salt, and pepper to taste.
Let it Simmer: Bring your soup to a boiling point, then reduce the heat allowing it to simmer for about 30 minutes, or until the potatoes are soft. Adjust seasoning as needed and garnish with parsley before serving.
