Hobo Casserole Ground Beef Recipe

- 1 pound ground beef
- 1 cup onion diced
- 1 tablespoon garlic minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 5 medium potatoes thinly sliced
- 10.7 oz condensed cream of mushroom soup with or without garlic added
- 10.7 oz condensed cream of chicken soup
- 1 cup evaporated milk
- ½ cup milk
- 2 cups shredded cheese

Preheat and Prepare: Preheat your oven to 375°F and spray a 9x13 inch pan with cooking spray.
Cook the Beef Mixture: In a large skillet, cook the ground beef, diced onions, and minced garlic until the beef is no longer pink. Drain well, then season with salt and black pepper.
Layer Potatoes and Beef: Lay out a layer of thinly sliced potatoes at the bottom of the prepared pan. Spread half of the cooked beef mixture over the potatoes.
Combine Soups and Milk: In a bowl, whisk together the condensed cream of mushroom soup, cream of chicken soup, evaporated milk, and regular milk until smooth. Pour half of this soup mixture over the beef layer, then sprinkle with one cup of shredded cheese.
Repeat Layers: Add another layer of potatoes, followed by the remaining beef mixture. Pour the rest of the soup mixture on top, finishing with the remaining shredded cheese.
Cover and Bake: Cover the pan with tinfoil, tenting it so it doesn’t touch the cheese. Bake in the preheated oven for 1 hour.
Finish Baking: Remove the tinfoil and continue baking for an additional 30 minutes until the top is golden and bubbly.
Rest Before Serving: Let the casserole stand for 10 minutes on a wire rack before slicing and serving.
