Ground Beef and Broccoli

- ½ cup reduced sodium soy sauce or gluten-free tamari
- 1 tablespoon honey
- 4 cloves garlic minced
- 1 1- inch piece fresh ginger peeled and grated
- 1 tablespoon cornstarch
- ½ tablespoon sesame oil
- 1 pound ground beef 93% lean
- ½ medium yellow onion chopped
- 1 large head broccoli cut into florets and blanched
- 1 tablespoon toasted sesame seeds
- 3 medium scallions sliced on the bias
- cooked rice or cauliflower rice, for serving (optional)
Prepare Sauce: Mix ½ cup reduced sodium soy sauce or gluten-free tamari, 1 tablespoon honey, 4 minced garlic cloves, 1 inch of grated fresh ginger, and 1 tablespoon cornstarch in a small bowl. Set aside for later.
Beef and Onion Sauté: In a large skillet over medium-high heat, add ½ tablespoon sesame oil. Cook 1 pound of ground beef and ½ a medium yellow onion, stirring occasionally, until the beef is almost fully cooked, roughly 5 minutes.
Combine with Sauce and Broccoli: Introduce the prepared sauce to the skillet, stirring well to incorporate with the beef and onion for 1 minute. Follow by adding the blanched broccoli florets, cooking everything together for another minute.
Garnish and Serve: Dish out the stir-fry on plates, optionally over a base of cooked rice or cauliflower rice. Sprinkle each serving with toasted sesame seeds and sliced scallions for garnish.
