Ground Beef Stuffed Peppers

- 1 pound 90% lean ground beef
- 1¼ teaspoons salt
- ¼ teaspoon baking soda
- 3 large red yellow, or orange bell peppers
- 3 tablespoons extra-virgin oil
- 1 medium yellow onion finely chopped
- 3 cloves garlic minced
- 1½ teaspoons chili powder
- ½ teaspoon ground cumin
- ¼ teaspoon dried oregano
- 1 8-oz can tomato sauce
- 1 cup cooked rice quinoa, or any grain
- 1½ cups shredded Monterey Jack or Cheddar Jack cheese
Heat your oven to 425°F and position a rack in the center.
Mix the ground beef with 1 teaspoon salt and baking soda in a bowl. Let it rest for 20 minutes.
Optionally line a 9x13-inch baking dish with foil. Place the pepper halves in the dish, drizzle with a tablespoon of oil, and season with ¼ teaspoon salt.
Bake the peppers for 20 minutes until they're slightly charred but still firm.
In a skillet over medium heat, cook the onions in the remaining oil until translucent (about 3-4 minutes). Add garlic and cook for another minute.
Stir in the beef, chili powder, cumin, and oregano. Cook on medium-high until the beef is nearly done, about 4-5 minutes.
Incorporate the tomato sauce and simmer for 2-3 minutes.
Add the rice and ¾ cup of cheese to the skillet, stirring until the cheese is melted.
Stuff the roasted peppers with the beef mixture and top with the remaining cheese.
Bake for another 10-15 minutes until the cheese is golden and bubbly. Serve hot.
