Ingredients
  

  • 1 pound 90% lean ground beef
  • teaspoons salt
  • ¼ teaspoon baking soda
  • 3 large red yellow, or orange bell peppers
  • 3 tablespoons extra-virgin oil
  • 1 medium yellow onion finely chopped
  • 3 cloves garlic minced
  • teaspoons chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon dried oregano
  • 1 8-oz can tomato sauce
  • 1 cup cooked rice quinoa, or any grain
  • cups shredded Monterey Jack or Cheddar Jack cheese

Instructions
 

  • Heat your oven to 425°F and position a rack in the center.
  • Mix the ground beef with 1 teaspoon salt and baking soda in a bowl. Let it rest for 20 minutes.
  • Optionally line a 9x13-inch baking dish with foil. Place the pepper halves in the dish, drizzle with a tablespoon of oil, and season with ¼ teaspoon salt.
  • Bake the peppers for 20 minutes until they're slightly charred but still firm.
  • In a skillet over medium heat, cook the onions in the remaining oil until translucent (about 3-4 minutes). Add garlic and cook for another minute.
  • Stir in the beef, chili powder, cumin, and oregano. Cook on medium-high until the beef is nearly done, about 4-5 minutes.
  • Incorporate the tomato sauce and simmer for 2-3 minutes.
  • Add the rice and ¾ cup of cheese to the skillet, stirring until the cheese is melted.
  • Stuff the roasted peppers with the beef mixture and top with the remaining cheese.
  • Bake for another 10-15 minutes until the cheese is golden and bubbly. Serve hot.
