Ingredients
  

  • 1 pound ground beef
  • 1 yellow onion
  • 1 tablespoon Taco Seasoning
  • 2 cups Enchilada Sauce
  • 8 tortillas in enchilada size
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions
 

  • Oven Setup: Heat your oven to 350 degrees in readiness for baking.
  • Sauté Beef and Onion: Over medium-high heat in a skillet, combine the ground beef, onion, and taco seasoning, cooking until the beef is well browned.
  • Remove Excess Fat: Once cooked, drain off any additional fat from the beef and onion mixture.
  • Cheese Preparation: Mix together shredded cheddar and Monterey Jack cheeses in a bowl.
  • Sauce the Dish: Spread around half a cup of enchilada sauce in the base of your baking dish.
  • Fill Tortillas: On each tortilla, add a helping of the beef mixture and sprinkle with cheese. Roll up and place seam-side down in the dish.
  • Complete Assembly: Fill the remaining tortillas in the same manner, arranging them in the baking dish. Top with the leftover enchilada sauce and sprinkle the remaining cheese over them.
  • Baking Time: Place the dish in the oven and bake for 15 to 20 minutes, until the dish is thoroughly heated and the cheese is golden and bubbling.
