Ingredients
  

  • 1 pound lean ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced
  • 3 ½ cups beef broth
  • 28 ounces canned diced tomatoes with juice
  • 1 can condensed tomato soup
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 bay leaf
  • salt and pepper to taste
  • 3 cups mixed vegetables fresh or frozen

Instructions
 

  • Cook the onion, ground beef, and garlic in a pan until the beef is thoroughly cooked with no pink remaining. Then, remove any excess grease.
  • Add the potatoes, broth, diced tomatoes, tomato soup, Worcestershire sauce, Italian seasoning, and bay leaves to the pan. Cover and allow it to simmer for about 10 minutes.
  • Stir in the mixed vegetables and continue simmering for another 15-20 minutes, or until the potatoes are tender.
