- 1 pound lean ground beef
- 1 onion diced
- 2 cloves garlic minced
- 2 medium potatoes peeled and diced
- 3 ½ cups beef broth
- 28 ounces canned diced tomatoes with juice
- 1 can condensed tomato soup
- 2 teaspoons Worcestershire sauce
- 1 teaspoon Italian seasoning
- 1 bay leaf
- salt and pepper to taste
- 3 cups mixed vegetables fresh or frozen
Cook the onion, ground beef, and garlic in a pan until the beef is thoroughly cooked with no pink remaining. Then, remove any excess grease.
Add the potatoes, broth, diced tomatoes, tomato soup, Worcestershire sauce, Italian seasoning, and bay leaves to the pan. Cover and allow it to simmer for about 10 minutes.
Stir in the mixed vegetables and continue simmering for another 15-20 minutes, or until the potatoes are tender.
