I’m always looking for new bread recipes. This time I wanted to make something a bit different for breakfast. What about surprising my family by stuffing them with something as smooth, creamy and healthy as a date puree?
Buckwheat is a great seed rich in protein and minerals. The kids have great fun finding something sweet hidden in it when they bite in.
With all the chemicals added to the commercial chocolate spreads, I don’t buy them anymore. So I had to make my own. Since I was using cocoa powder and dark chocolate, I had to find a healthy way to make it a bit sweet, so I thought of replacing the sugar with dates.
The whole family just thought it was amazing. They loved it!
3. Blueberry and chocolate pancakes
Sometimes, on weekend mornings, we have a more elaborate breakfast. I find buckwheat flour is a great substitute for whole wheat flour, which really gives my daughter stomach pain.
Breakfast is always a challenge. You want variety; you also look for healthy food to start the day, and organic cereals can sometime be pricey. By making cereal at home, you reduce the cost and increase the quality.
I gave you a basic recipe, but you can change the ingredients as you feel or depending on what you have.
Let’s prepare Monday’s breakfast by making some nice fresh muffins!
The reason I call them fruit salad muffins is just that it’s a fun name and the recipe combines 3 different fruits: blueberries, bananas and orange juice. You could actually put any berries you want, but I had these in the freezer. (Since we live in Nordic temperatures, fresh berries are expensive and come from too far right now!)
