Soup of the week: Creamy cauliflower soup

You might be wondering what happened with the other half of my big cauliflower. With one half I had made my cauliflower salad, and now I made a nice creamy soup with the other one. This soup is so velvety, it is another great meal idea for Thanksgiving or the holidays.

Even for a weekday like today, it is so great, my kids loved it, even though I think I went a bit strong on the pepper. 🙂 Give bread and life is great! 🙂

It is a very easy soup to make and can even be frozen, so you can make as much as you want. As you will see, not too many ingredients so no reason not to make it!

Preparation time: 10 minutes

Cooking time: 20 minutes

  • A bit of olive oil
  • 1 medium (about 4 cups) organic cauliflower
  • 1 organic red onion
  • 2 small organic potatoes
  • 6 cups of water
  • Salt and pepper
  1. In a medium pot, heat the oil and stir in the onions.
  2. Add the potatoes and the cauliflower coarsely chopped and cook them for 2 or 3 minutes.
  3. Put in the water one cup at the time and bring to boil, add some salt and pepper. Let it simmer for another 15 minutes.
  4. Once the vegetable are cooked, blend with a hand blender until you get a smooth texture. If you need to, adjust the seasoning.
  5. You will get a nice soft and smooth soup.

  2. I love Cauliflower so much! This is a perfect 7 easy recipe to create. Even I can handle this. I enjoyed your pancakes too & the gluten free brownies. I love that so many are vegan/meat free recipes. I am not a vegetarian anymore, but I am trying to cut meat out of my diet. Maybe make it 1% of my diet? less? Unless I can guarantee where its from I am not comfortable eating it. That said, it looks as if I may being going back to the vegetarian ways of life.

    • Thank a lot for your comment. It is so appreciated. I try to do my best to show that it is possible to cut back on meat, even if it is not by being a vegetarian completely, there are possibilities and options. I hope you’ll continue to enjoy!

  3. I am sorry about that typo comment.
    I love cauliflower a lot & am excited I found this wonderful blog and recipe.
    I was a vegetarian for my entire teen years & as a teen does, ate poorly and reverted back.
    I believe even I could make this recipe! Would it be ok to add some cream or even a greek yogurt to thicken it up? What do you suggest?
    I liked the idea of the gluten free desserts and those pancakes looks fabulous. I am excited to want to try these recipes and actually use my stove again. Now? it holds stacks of mail and magazines. lolz
    I am emailing subscribing btw. I do not want to miss a post.

    • If you want to add cream, add it at the end, stove closed, or it will make lumps and just a little bit, for 6 cups, add maybe 1/3 cup, and use a cream that can be cooked. Yogourt, DON’T cook it, it will look horrible in your soup. Big lumps, not attractive at all. If you wand to add some, add it in your bowl and add some pepper, always tastier. 🙂 Hope it helps
